Watermelons are ready for you to pick them up and enjoy the great refreshing flavor of them, and at the same time you are giving your body a great treat, because watermelon has an abundance of health benefits. Here are a few of them, so enjoy a few pieces every day!

Watermelon is the most important antioxidants found in nature, plus vitamin A, B and C, and lycopene. This is an antioxidant that is a great help in fighting cardio vascular diseases and helps lower your cholesterol.

Like in tomatoes, lycopene, is also responsible for the beautiful red color of the watermelon. Both the tomato and watermelon help your body fight and reduce the risks of prostate cancer.

When the heat of summer drains our energy drinking watermelon juice or eating watermelon gives us a healthy choice versus the high sugar-chemically enhanced juices. Since it contains high water quantity it can hydrates us whereas other drinks are caffeine filled energy drinks can easily dehydrate us. Nothing can be more satisfactory on a hot, dusty day than a crisp, juicy slice of watermelon! So enjoy!

Watermelon salad
Ingredients serves 2

  • 2 cups cubed seeded watermelon
  • 3 cups mixed greens
  • 1 tablespoon basil, chiffonade (roll up the leaves and slice them thin)
  • 1 teaspoon lime juice
  • 3 teaspoons extra virgin olive oil
  • 1 tablespoon pine nuts, toasted until light golden brown
  • 2 teaspoons Herbs de Provence

Directions

  1. Cut all ingredients in the desired shape and toast the pine nuts in a skillet.
  2. Place lime juice, olive oil, pine nuts and Herbs de Provence in a bowl and mix well.
  3. Divide watermelon and mixed greens over 2 bowls, and serve with salad dressing on the side.

2 cups water

1/2 cup white sugar
1 tablespoon basil, chiffonade (roll up the leaves and slice them thin)
1 cup lime juice
12 cups cubed seeded watermelon
8 cups ice cubes

Directions
Bring water and sugar to a boil in a small saucepan over high heat. Stir in the basil chiffonade, and set aside to steep for 1 hour.
Place half of the lime juice, and half of the watermelon into a blender. Strain the basil syrup through a mesh strainer into the blender. Cover, and puree until smooth. Strain into a pitcher, then puree the remaining lime juice and watermelon. Stir the lemonade before serving over ice.
Watermelon dessert
Ingredients
1 pound watermelon
2 tablespoons honey
3 tablespoons lime juice
pinch sea salt
1/2 teaspoons ground ginger
balsamic vinegar reduction sauce
Preparation
In a large bowl, add honey, lime juice, sea salt and ginger.
Remove the rind from the watermelon and cut into 1/2-inch slices and remove seeds. Cut the watermelon into cubes and place in individual bowls.
In separate saucepan pour in the balsamic vinegar with 1 tablespoon sugar, and let it simmer for 30-45 minutes until reduced to half.
In a large bowl mix water melon pieces with the honey lime mixture and serve with balsamic reduction on the side.
